Description

  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ cup sugar (heaped)
  • ½ teaspoon salt
  • 2 large eggs, lightly beaten
  • ⅔ cups oil (canola or light olive oil preferred)
  • 1 cup Greek yogurt (plain, unsweetened)
  • ¼ to ½ cup milk
  • 1½ cups blueberries
  • extra sugar for sprinkling (optional)

Instructions

  1. Preheat the oven to 190°C/375°F.
  2. Line a 12-cup muffin tin with paper liners and spray lightly with oil.
  3. In a large bowl, combine flour, baking powder, baking soda, sugar, and salt.
  4. In a separate bowl, whisk together eggs, oil, yogurt, and milk.
  5. Add wet ingredients to dry and stir gently until just combined. Don’t overmix.
  6. Gently fold in the blueberries.
  7. Spoon batter into muffin cases, filling almost to the top. Sprinkle with extra sugar if desired.
  8. Bake for 17–25 minutes or until a toothpick comes out clean.
  9. Cool on a wire rack before serving.

Notes

For a crisp muffin top, sprinkle extra sugar before baking. Adjust milk if the batter is too thick. These muffins can be customized with different fruits, nuts, or spices.
